Some of mine have cooked much faster than the time listed in the book.

This book is very well organized, the recipes are easy to find and to follow, there are lots of great pictures since some of the baked goods may be unfamiliar to Americans so we can tell what our efforts should produce.
I had become afraid of baking , I thought I was getting too old and disorganized, Mary Berry is SIX years older than I am, if she can do it then so can I.

The only thing I''ve had issues with is the cooking time. The cooking times seem pretty close when cooking in cast iron, but standard baking pans need far, far less than stated. I''ve ruined a couple of cakes, even when reducing cooking time. For example, The "Cut & Come Again" cake on p90, you''re meant to bake it for 75-90 mins @ 350''F. I baked it for 50 mins, and it was still significantly overcooked (inedible). I had a slightly flatter cake tin than suggested, which may have contributed a small amount, but not enough to produce the result. I''m going to try this again, and check the cake at 30 mins.

Overall though, Mary''s a winner and despite needing to fiddle with the timing, this has become my new favorite cake book.

Strong flour vexed me but from her writing it is clear that Miss Mary is likely talking about what we call bread flour with it''s higher protein levels. Lovely book, well laid out and easily used by beginner and accomplished bakers.

I want to say this book makes every bake a bit too simple and the results should be blah especially as Mary uses the all in one method in virtually every recipe but the truth is they all work out just fine , especially if you have a decent mixer , I do tweak several of the recipes and add extra of the “nice “ ingredients for example more topping to the lemon drizzle tray bake which incidentally has become my best friends favourite and so quick and easy The book is divided up into 20 chapters The go to book for cakes and bakes. Very comprehensive and very reliable. It begins with an introductory section covering techniques, then 20 chapters: Classic cakes , Fruit and nut cakes , Spiced cakes, Chocolate cakes, Cupcakes and other small bakes, Celebration cakes, Special cakes, tray bakes and flapjacks, Biscuits and cookies, Fancy biscuits, Shortbreads and bars,Baking for children,Tarts and pastries, Breads, Fruit breads, Buns and scones, Hot puddings and pies, Soufflés and meringues, Cheesecakes, Cake decoration. It includes a lot of recipes mostly all are simple from traybakes to cheesecakes to buns and scones to breads and sponge cakes to victorian sandwiches, swiss rolls celebration cakes tarts cupcakes kids bakes biscuits cookies.. Almost any baking thing. As I said the recipes are simple and mostly classics but those are the cakes you need to make the rest depends on the decoration and giving the cake your own touch.. I read reviews that the book doesn''t contain many pictures that''s right but for example there is a picture for the victoria sandwich the classic one and its recipe and then followed by two other recipes one is chocolate victoria sandwich with no photo but the main image is there it is just changing flavors.. Same goes for tart there''s the image of the french apple tart and its recipe followed by other recipes of tarts with different toppings but without photos.But the image is almost there of what any tart or cake would look like. I would recommend this book as the ingredients are completely simple and available.

I bought this book on Amazon six years ago and I thought I should leave a review to say that I still use it all the time. Most of the recipes look deceptively simple, but you can actually trust them to work, whereas other baking books might look fancier but they overcomplicate things or use more expensive ingredients to make things that just taste nowhere near as good. Honestly I''m now resolved not to bother trying to make cakes any other way than the way Mary suggests because it never goes well! This is the only baking book you actually need to have a great all-round baking repertoire.

I am a complete beginner to baking and love this book. So far I''ve tried the Victoria Sponge (start simple!), Muffins, Apple and Cinnamon cake (My new favourite), Cheese Scones and Brownies. Everything has been so easy to follow and (so far!) turned out really well. This book has everything you need to get started, including a section explaining the different techniques mentioned in the recipes and another section outlining the basic equipment you need to get started. As some other people have said there is plenty of room for more pictures, I like a picture to see what I''m trying to make and the conversions from grams to oz (or oz to grams!?!) are a bit iffy. The rounding actually affects the ratio of the ingredients quite a bit in some cases and makes you wonder if the oz or the Grams produce the correct mixture she intended. But maybe that is being a bit pedantic.
